Before the harvest, there is waiting.

A vanilla vine spends years climbing beneath the shade of living trees before it produces its first flowers. Then, after pollination, each pod takes nine months to mature.

Nothing about vanilla can be rushed.

In Mananara, on Madagascar’s north-east coast, this slow rhythm is simply a way of life. Within a UNESCO Biosphere Reserve, vanilla grows among forests alive with extraordinary biodiversity, where nature and cultivation exist side by side.

When harvest season finally arrives, there is no single day to gather every pod.

Instead, growers return to the vines every morning, searching for one subtle sign: a delicate yellow blush at the tip of an otherwise green pod.

That is the moment.

Pick it too early, and its full aroma never develops. Wait too long, and the pod begins to split naturally. Every vanilla bean is therefore harvested individually, by hand, exactly when it is ready.

But harvesting is only the beginning.

Within hours, the fresh pods are briefly immersed in hot water to begin the curing process. From there, they spend weeks moving between the warmth of the morning sun and the cool shade, drying slowly as their character begins to emerge.

Each day follows the same quiet rhythm.

Lay them out. Gather them in. Turn them. Inspect them.

Again.

And again.

Then comes perhaps the most overlooked stage of all: time.

For several more months, the pods rest and continue to mature. Their fragrance deepens naturally, revealing the warm, rich notes of cocoa, wood and soft spice that have made Madagascar vanilla renowned around the world.

Before leaving the island, every pod is examined one final time. Length. Colour. Moisture. Suppleness. Aroma. Nothing is left to chance.
